Description

A quick and delicious one-pan meal featuring ground chicken, vibrant mixed vegetables, and seasoned rice, perfect for weeknight dinners.


Ingredients

  • 2 cups cooked rice (day-old rice works best!)
  • 1 pound ground chicken
  • 1 cup mixed vegetables (peas, carrots, and bell peppers)
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 cloves garlic, minced
  • 2 green onions, chopped
  • Salt and pepper to taste
  • 1 large egg (optional)


Instructions

  1. In a large skillet or wok, heat the sesame oil over medium-high heat.
  2. Add the minced garlic and ground chicken. Cook until the chicken is browned and no longer pink.
  3. Stir in the mixed vegetables and sauté until they are tender.
  4. Push the chicken and vegetables to one side of the skillet. If using, crack the egg on the other side and scramble it until fully cooked.
  5. Add the cooked rice, soy sauce, and green onions to the skillet. Stir well to combine all the ingredients.
  6. Season with salt and pepper to taste.
  7. Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through.
  8. Serve hot, and enjoy your homemade delight!

Notes

Use day-old rice for the best texture. Customize with any vegetables you have on hand.
