A quick and delicious one-pan meal featuring ground chicken, vibrant mixed vegetables, and seasoned rice, perfect for weeknight dinners.
Ingredients
- 2 cups cooked rice (day-old rice works best!)
- 1 pound ground chicken
- 1 cup mixed vegetables (peas, carrots, and bell peppers)
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 2 cloves garlic, minced
- 2 green onions, chopped
- Salt and pepper to taste
- 1 large egg (optional)
Instructions
- In a large skillet or wok, heat the sesame oil over medium-high heat.
- Add the minced garlic and ground chicken. Cook until the chicken is browned and no longer pink.
- Stir in the mixed vegetables and sauté until they are tender.
- Push the chicken and vegetables to one side of the skillet. If using, crack the egg on the other side and scramble it until fully cooked.
- Add the cooked rice, soy sauce, and green onions to the skillet. Stir well to combine all the ingredients.
- Season with salt and pepper to taste.
- Cook for an additional 2-3 minutes, stirring frequently, until everything is heated through.
- Serve hot, and enjoy your homemade delight!
Notes
Use day-old rice for the best texture. Customize with any vegetables you have on hand.
