Description

Ingredients

  • 2 cups rolled oats
  • 2 cups almond milk (or any plant-based milk)
  • 1 cup fresh or frozen blueberries
  • 1/4 cup maple syrup or agave nectar
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts (optional)


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a baking dish.
  2. In a large bowl, combine the rolled oats, almond milk, blueberries, maple syrup, baking powder, cinnamon, salt, and vanilla extract until well mixed.
  3. Pour the mixture into the prepared baking dish, spreading it evenly. Optionally, sprinkle chopped nuts on top.
  4. Bake for 30-35 minutes, or until the oatmeal is set and lightly golden on top.
