Ingredients
- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 cup cooked rice
- 1 cup diced tomatoes
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 packet taco seasoning
- 1/2 cup salsa
- 1 tablespoon olive oil
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, cooked rice, diced tomatoes, taco seasoning, salsa, olive oil, salt, and pepper.
- Mix all the ingredients until well combined and colorful.
- Transfer the mixture into a greased casserole dish and spread it evenly.

- Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
