Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup cooked rice
  • 1 cup diced tomatoes
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 packet taco seasoning
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Chopped cilantro for garnish


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the shredded chicken, black beans, corn, cooked rice, diced tomatoes, taco seasoning, salsa, olive oil, salt, and pepper.
  3. Mix all the ingredients until well combined and colorful.
  4. Transfer the mixture into a greased casserole dish and spread it evenly.
  5. Top with shredded cheese, creating a golden layer that will melt beautifully.
  6. Bake in the preheated oven for 25-30 minutes or until the cheese is melted and bubbly.
