Description

A delicious and comforting stir-fried noodle dish with tender chicken and colorful vegetables tossed in a savory sauce.


Ingredients

  • 3-4 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 2 carrots, thinly sliced
  • 2 green onions, chopped
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic


Instructions

  1. Gather all your ingredients and chop the vegetables into bite-sized pieces.
  2. Cook the Lo Mein noodles according to the package instructions until al dente; drain and set aside.
  3. Heat a large skillet or wok over medium-high heat. Add a splash of oil and sauté the chicken for about 6-8 minutes, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside.
  4. In the same pan, add the bell peppers, carrots, and green onions, cooking until tender yet still crisp, around 3-4 minutes.
  5. Return the cooked chicken to the skillet with the vegetables, then add the cooked Lo Mein noodles, soy sauce, sesame oil, and minced garlic. Toss everything together until well blended.
  6. Serve hot, adding extra soy sauce to taste if desired.

Notes

For a vegetarian option, substitute chicken with tofu and use vegetable broth instead of soy sauce.
