Ingredients
- 1 lb chicken breast, diced
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 4 cups chicken broth
- 1 cup peas
- 2 cups cauliflower rice
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot or Instant Pot, heat olive oil over medium heat.
- Add the diced onion, carrots, and celery; sauté until soft, about 5-7 minutes.
- Stir in the chicken pieces and cook until slightly browned.
- Pour in the chicken broth, add thyme and rosemary, then bring to a simmer.
- Mix in the cauliflower rice and peas, cooking until the cauliflower is tender, about 5 minutes.
