Ingredients

  • 1 lb chicken breast, diced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 4 cups chicken broth
  • 1 cup peas
  • 2 cups cauliflower rice
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • 2 tbsp olive oil


Instructions

  1. In a large pot or Instant Pot, heat olive oil over medium heat.
  2. Add the diced onion, carrots, and celery; sauté until soft, about 5-7 minutes.
  3. Stir in the chicken pieces and cook until slightly browned.
  4. Pour in the chicken broth, add thyme and rosemary, then bring to a simmer.
  5. Mix in the cauliflower rice and peas, cooking until the cauliflower is tender, about 5 minutes.
  6. Season with salt and pepper to taste.
