Description

A nourishing and flavorful rice bowl featuring tender chicken, roasted sweet potatoes, and fluffy rice, perfect for busy weeknight dinners.


Ingredients

  • 1 lb chicken breast, diced
  • 2 sweet potatoes, peeled and cubed
  • 1 cup cooked rice
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, toss the sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until tender and golden.
  3. While the sweet potatoes are roasting, heat the remaining olive oil in a skillet over medium heat. Add the diced chicken, seasoning it with salt and pepper, and cook until browned and cooked through, about 7-10 minutes.
  4. In a bowl, layer the cooked rice, roasted sweet potatoes, and chicken.
  5. Garnish with fresh herbs if desired and serve warm.

Notes

Consider marinating the chicken beforehand for extra flavor. Leftovers can be stored in an airtight container for 3-4 days and can be frozen for up to 2 months.
