Ingredients
- 1 lb chicken breast, diced
- 2 sweet potatoes, peeled and cubed
- 1 cup cooked rice
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp paprika
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, toss the sweet potatoes with 1 tablespoon of olive oil, garlic powder, paprika, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes until tender and golden.
- While the sweet potatoes are roasting, heat the remaining olive oil in a skillet over medium heat. Add the diced chicken, seasoning it with salt and pepper, and cook until browned and cooked through, about 7-10 minutes.
- In a bowl, layer the cooked rice, roasted sweet potatoes, and chicken.
- Garnish with fresh herbs if desired and serve warm.
Notes
Consider marinating the chicken beforehand for extra flavor. Leftovers can be stored in an airtight container for 3-4 days and can be frozen for up to 2 months.
