Description

A wholesome, filling bowl featuring tender chicken, roasted sweet potatoes, and fluffy rice for a nutritious and delicious meal.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, cubed
  • 1 cup rice (brown or white)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: spices (such as paprika or garlic powder)
  • Fresh herbs for garnish (like parsley or cilantro)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread them on a baking sheet and roast for about 25-30 minutes, until they’re tender and lightly caramelized.
  3. While the sweet potatoes are roasting, cook the rice according to package instructions.
  4. Season the chicken breasts with salt, pepper, and any desired spices. Cook them in a skillet over medium heat for 6-7 minutes on each side, until they are fully cooked and no longer pink.
  5. Once everything is cooked, assemble your bowl: place rice at the bottom, top it with roasted sweet potatoes and sliced chicken.
  6. If you want, garnish with fresh herbs.

Notes

For extra flavor, marinate the chicken in olive oil, garlic, and herbs for at least 30 minutes before cooking. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
