Ingredients

  • 1 cup whole wheat flour
  • 1 cup almond flour
  • 1 tsp baking powder
  • 1/2 cup natural sweeteners like erythritol or stevia
  • 2 eggs
  • 1/2 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • A pinch of salt
  • Optional: sugar-free chocolate chips, nuts, or dried fruits


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the whole wheat flour, almond flour, baking powder, and salt.
  3. In another bowl, combine the eggs, applesauce, and vanilla extract. Whisk until smooth.
  4. Gradually add the dry mixture to the wet ingredients, stirring until fully combined.
  5. Fold in any optional add-ins like sugar-free chocolate chips or nuts.
  6. Using a tablespoon, scoop the cookie mixture onto a greased baking sheet, placing them a couple of inches apart.
  7. Bake for about 10-12 minutes or until the edges turn golden.
  8. Allow the cookies to cool on a wire rack before serving.
