Ingredients
- 1 cup whole wheat flour
- 1 cup almond flour
- 1 tsp baking powder
- 1/2 cup natural sweeteners like erythritol or stevia
- 2 eggs
- 1/2 cup unsweetened applesauce
- 1 tsp vanilla extract
- A pinch of salt
- Optional: sugar-free chocolate chips, nuts, or dried fruits
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix the whole wheat flour, almond flour, baking powder, and salt.
- In another bowl, combine the eggs, applesauce, and vanilla extract. Whisk until smooth.
- Gradually add the dry mixture to the wet ingredients, stirring until fully combined.
- Fold in any optional add-ins like sugar-free chocolate chips or nuts.
- Using a tablespoon, scoop the cookie mixture onto a greased baking sheet, placing them a couple of inches apart.
- Bake for about 10-12 minutes or until the edges turn golden.
- Allow the cookies to cool on a wire rack before serving.
