Description

A delicious and quick high-protein chicken ranch quesadilla that’s easy to make and perfect for a weeknight dinner.


Ingredients

  • Cooked chicken (shredded or cubed)
  • Greek yogurt
  • Laughing Cow cheese
  • Low-carb tortillas


Instructions

  1. Cook your chicken in a skillet over medium heat until it’s fully cooked through.
  2. Combine the cooked chicken with Greek yogurt and Laughing Cow cheese in a mixing bowl, stirring until smooth.
  3. Spread the chicken mixture on one half of a low-carb tortilla.
  4. Fold the tortilla over and place it back into the skillet.
  5. Cook until crispy and golden brown on both sides, about 3-4 minutes per side.
  6. Slice into wedges and serve hot with your favorite sides.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. For reheating, use a skillet or microwave. Can be frozen for up to 2 months.
