High Protein Cottage Cheese Blueberry Muffins


Description

Delightful muffins packed with protein, made with cottage cheese and blueberries, perfect for a healthy snack or breakfast.


Ingredients

  • 1 cup cottage cheese
  • 1 cup blueberries (fresh or frozen)
  • 1 cup whole wheat flour
  • 1/2 cup oats
  • 1/2 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the cottage cheese, honey (or maple syrup), eggs, and vanilla extract. Mix until well incorporated and creamy.
  3. In another bowl, mix together the whole wheat flour, oats, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, stirring just until combined.
  5. Gently fold in the blueberries.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

Store muffins in an airtight container for up to 3 days or freeze for up to 3 months.
