Delightful muffins packed with protein, made with cottage cheese and blueberries, perfect for a healthy snack or breakfast.
Ingredients
- 1 cup cottage cheese
- 1 cup blueberries (fresh or frozen)
- 1 cup whole wheat flour
- 1/2 cup oats
- 1/2 cup honey or maple syrup
- 2 eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine the cottage cheese, honey (or maple syrup), eggs, and vanilla extract. Mix until well incorporated and creamy.
- In another bowl, mix together the whole wheat flour, oats, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring just until combined.
- Gently fold in the blueberries.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Let cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Store muffins in an airtight container for up to 3 days or freeze for up to 3 months.
