Ingredients

  • 1 cup cottage cheese
  • 2 cups all-purpose flour
  • 1 cup blueberries (fresh or frozen)
  • 1/2 cup sugar or sweetener of choice
  • 1/4 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon (optional)


Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the cottage cheese, milk, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon if you’re using it.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow your muffins to cool slightly before serving.

Notes
