Ingredients

  • 1 pound ground turkey or chicken
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken or vegetable broth
  • 1 (15-ounce) can diced tomatoes
  • 1 (8-ounce) can tomato sauce
  • 2 teaspoons Italian seasoning
  • 1 cup whole wheat lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. In a large pot, sauté the ground turkey or chicken until cooked through, mixing in the diced onion and minced garlic.
  2. Pour in the broth, diced tomatoes, and tomato sauce, stirring in Italian seasoning, salt, and pepper. Bring to a boil.
  3. Add the broken lasagna noodles, reduce heat, and simmer for about 15 minutes until the noodles are tender.
  4. Stir in the ricotta cheese, allowing it to melt and blend into the soup.
  5. Serve in bowls topped with shredded mozzarella and fresh basil.

Notes
