Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup breadcrumbs (panko recommended)
- 2 eggs, beaten
- 1 cup flour
- Salt and pepper to taste

- Cooking oil (for frying)
Instructions
- Preheat your oven to 400°F if baking, or heat oil in a deep skillet if frying.
- Season your chicken pieces with salt, pepper, and any optional spices you prefer.
- Set up a breading station with three shallow bowls: one for flour, one for beaten eggs, and one for breadcrumbs.
- Dredge each chicken piece in flour, dip it in the egg, and then coat it with breadcrumbs. Press slightly to ensure the coating sticks.
- Arrange the coated chicken bites on a baking sheet lined with parchment paper if baking, or place them carefully in the hot oil if frying.
- If baking, cook for about 20 minutes, flipping halfway. If frying, aim for 5-6 minutes per side until golden brown.
- Allow to cool slightly before serving.
Notes
For extra crispiness, consider double-coating the chicken bites. Store leftovers in an airtight container for up to three days or freeze for up to three months.
