A quick and satisfying meal featuring tender chicken in sweet and tangy BBQ sauce served over fluffy rice.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish


Instructions

  1. Season the chicken: Start by seasoning the chicken thighs generously with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Sear the chicken: Heat a skillet over medium heat. Add the seasoned chicken and sear for approximately 3–4 minutes on each side until golden brown. Remove the chicken from the skillet and set it aside.
  3. Mix the sauce: In a bowl, combine the BBQ sauce, honey, soy sauce, and a bit of minced garlic to create a flavorful glaze.
  4. Toast the rice: In the same skillet, toast the uncooked rice for about 1–2 minutes until fragrant. Then add the chicken broth and half the sauce mixture, stirring well to combine.
  5. Combine chicken and sauce: Return the seared chicken to the pan and pour the remaining sauce over the top. Cover and let it all simmer on low heat for about 15 minutes.
  6. Add vegetables: After 15 minutes, add in the mixed vegetables, cover, and cook for an additional 5 minutes or until the rice is tender and the chicken is cooked through.
  7. Let it rest: Allow the dish to sit for about 5 minutes before serving. Garnish with chopped green onions and dig in!

Notes

For extra flavor, marinate the chicken overnight. Leftovers can be stored in an airtight container for up to three days.
