Hot Chocolate Peppermint Fudge

Description

A decadent blend of creamy chocolate and festive peppermint, this fudge is perfect for cozy nights and holiday gatherings.


Ingredients

  • 2 cups semi-sweet chocolate chips (divided)
  • 1 1/2 cups milk chocolate chips
  • 3 tablespoons butter
  • 14 ounces sweetened condensed milk
  • 4 packages of hot chocolate mix (1/2 cup)
  • 2 teaspoons vanilla extract
  • 4 cups marshmallows (divided)
  • 1/2 cup peppermint candy canes or crushed peppermints for garnish


Instructions

  1. Line an 8×8” pan with foil or parchment paper and spray it with cooking spray.
  2. In a double boiler, combine 1 1/2 cups semi-sweet chocolate chips, 1 1/2 cups milk chocolate chips, butter, sweetened condensed milk, and hot chocolate mix.
  3. Stir continuously over medium heat until melted and silky smooth.
  4. Add 2 cups of marshmallows and stir until they begin to soften.
  5. Remove from heat and stir in the vanilla extract.
  6. Pour the mixture into the prepared pan, spreading evenly and pressing remaining marshmallows into the top.
  7. Refrigerate for about 4 hours to set.
  8. Once firm, cut into squares.
  9. Melt the remaining 1/2 cup of chocolate in the microwave and drizzle over the fudge.
  10. Let cool completely before serving.

Notes

Store in an airtight container for up to 2 weeks in the refrigerator or in a well-sealed container in the freezer for up to 3 months.
