Instant Pot Chicken Burrito Bowls


Description

A quick and flavorful meal featuring tender chicken, rice, and beans, perfect for busy weeknights.


Ingredients

  • 1 pound chicken breast
  • 1 cup brown rice
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1 cup chicken broth
  • 1 tablespoon taco seasoning
  • 1 cup corn (either frozen or canned)
  • Salt and pepper to taste
  • Toppings: avocado, cheese, sour cream, cilantro


Instructions

  1. In the Instant Pot, combine the chicken breast, brown rice, black beans, diced tomatoes (with the juice), chicken broth, taco seasoning, corn, and a sprinkle of salt and pepper.
  2. Close the lid securely and set the Instant Pot to manual/high pressure for 10 minutes.
  3. Once cooking is complete, allow the pressure to release naturally for 10 minutes, then perform a quick release for any remaining pressure.
  4. Using two forks, shred the chicken right in the pot, stirring to combine all the ingredients well.
  5. Serve in bowls and top with avocado, cheese, sour cream, and cilantro as desired.

Notes

Feel free to swap ingredients based on preferences. Ground turkey or beef, and quinoa can be good substitutes.
