Ingredients
- 1 pound boneless, skinless chicken breasts
- 1 can white beans, drained and rinsed
- 1 can corn, drained
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 4 cups chicken broth
- Salt and pepper to taste
- Optional toppings: sour cream, cilantro, shredded cheese
Instructions
- Set the Instant Pot to the sauté setting. Add the diced onion and minced garlic. Sauté until softened and fragrant.
- Add the chicken breasts, drained white beans, corn, cumin, chili powder, and chicken broth. Season with salt and pepper.
- Secure the lid of the Instant Pot and set it to high pressure for 15 minutes.
- Once cooking time is up, quickly release the pressure.
- Remove the chicken and shred it using two forks. Stir the shredded chicken back into the chili. Serve with optional toppings.
Notes
For a spicier kick, add jalapeños or cayenne pepper. For a creamier texture, stir in cream cheese or sour cream before serving.
