Instant Pot White Chicken Chili


Description

A comforting and flavorful one-pot meal that’s quick and nourishing, perfect for chilly evenings or gatherings.


Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 can white beans, drained and rinsed
  • 1 can corn, drained
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Optional toppings: sour cream, cilantro, shredded cheese


Instructions

  1. Set the Instant Pot to the sauté setting. Add the diced onion and minced garlic. Sauté until softened and fragrant.
  2. Add the chicken breasts, drained white beans, corn, cumin, chili powder, and chicken broth. Season with salt and pepper.
  3. Secure the lid of the Instant Pot and set it to high pressure for 15 minutes.
  4. Once cooking time is up, quickly release the pressure.
  5. Remove the chicken and shred it using two forks. Stir the shredded chicken back into the chili. Serve with optional toppings.

Notes

For a spicier kick, add jalapeños or cayenne pepper. For a creamier texture, stir in cream cheese or sour cream before serving.
