Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 cup kale or spinach, chopped
  • Salt and pepper to taste


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened and fragrant.
  3. Stir in the chopped carrots and celery, cooking for an additional few minutes until they begin to soften.
  4. Pour in the vegetable broth and sprinkle in the dried oregano and thyme, stirring to combine.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for 15-20 minutes until all vegetables are tender.
  6. Add the kale or spinach and cook until wilted, about 2-3 minutes.
  7. Season the soup with salt and pepper to taste.

Notes
