Ingredients
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 3 carrots, chopped
- 2 celery stalks, chopped
- 4 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 cup kale or spinach, chopped
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and minced garlic, sautéing until softened and fragrant.
- Stir in the chopped carrots and celery, cooking for an additional few minutes until they begin to soften.
- Pour in the vegetable broth and sprinkle in the dried oregano and thyme, stirring to combine.
