Ingredients

  • 4 cups chicken or vegetable broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, for garnish


Instructions

  1. Heat a bit of olive oil in a large pot over medium heat.
  2. Add the diced onions, carrots, and celery. Sauté for about 5 minutes, letting the vegetables soften.
  3. Stir in the minced garlic, oregano, and thyme, and cook for an additional minute.
  4. Pour in the chicken or vegetable broth and bring to a gentle simmer.
  5. Season with salt and pepper to taste.
  6. Allow the soup to simmer for 20-30 minutes until all the vegetables are tender.
  7. Serve warm, garnished with fresh parsley.

Notes

Feel free to swap in vegetable broth for a vegetarian version. Serve with crusty bread or garlic knots.
