  • 3 carrots, peeled and diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until they soften and become translucent.
  3. Stir in the diced carrots and celery, cooking them until they start to soften.
  4. Pour in the vegetable broth and add the canned tomatoes.

  6. Bring the mixture to a boil, then reduce to a simmer. Let it cook for about 20-25 minutes, allowing all those flavors to meld beautifully.
