Description

A light and colorful Mediterranean orzo pasta salad bursting with fresh vegetables, zesty dressing, and creamy feta.


Ingredients

  • 2 cups Cucumbers
  • 1 1/2 tbsp Dill
  • 1/4 tsp Garlic powder
  • 1 tsp Oregano
  • 1/2 cup Red onion
  • 2 cups Tomatoes
  • 3 tbsp Lemon juice
  • 1/2 cup Olives
  • 1 1/2 cups Orzo
  • 1/2 tsp Pepper
  • 1/2 tsp Salt
  • 4 tbsp Olive oil
  • 1/2 cup Feta


Instructions

  1. Cook orzo according to package instructions, then drain and set aside.
  2. Combine cucumbers, dill, garlic powder, oregano, red onion, tomatoes, olives, and feta in a large bowl.
  3. Whisk together olive oil, lemon juice, salt, and pepper in a small bowl.
  4. Add the orzo to the vegetable mixture, then pour the dressing over.
  5. Toss everything together until well combined.
  6. Serve chilled or at room temperature.
