Description

Ingredients

  • 8 oz pasta (fusilli or rotini)
  • 2 cups corn (freshly grilled or canned)
  • 1 red bell pepper, diced
  • 1/2 red onion, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cilantro, chopped
  • 1 lime, juiced
  • 3 tablespoons olive oil
  • 1 teaspoon chili powder
  • Salt and pepper to taste


Instructions

  1. Cook the pasta according to package instructions. Once cooked, drain and set aside to cool.
  2. In a large mixing bowl, combine corn, diced red bell pepper, red onion, halved cherry tomatoes, and chopped cilantro.
  3. In a separate bowl, whisk together lime juice, olive oil, chili powder, salt, and pepper to create a flavorful dressing.
  4. Once the pasta has cooled, add it to the vegetable mixture.
