Ingredients

  • 2 lbs chicken breast, cooked and shredded
  • 8 oz cream cheese
  • 4 cups chicken broth
  • 1 cup diced tomatoes (canned or fresh)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, green onions


Instructions

  1. In a large pot, sauté the onions and garlic over medium heat until they’re soft and fragrant.
  2. Add in the shredded chicken, diced tomatoes, chicken broth, chili powder, cumin, salt, and pepper. Stir everything together to combine.
