Description

A simple, showstopping tart with bright lemon curd-like custard studded with juicy blueberries, set in a crisp tart shell.


Ingredients

  • 1 pre-made tart shell (9-inch)
  • 1 cup fresh blueberries
  • 1 cup lemon juice
  • 1 cup sugar
  • 4 large eggs
  • 1/4 cup unsalted butter (melted and cooled)
  • 1 tablespoon lemon zest
  • 1 tablespoon cornstarch


Instructions

  1. Preheat your oven to 350°F (175°C) and place a rack in the center.
  2. Crack the eggs into a medium bowl, add the sugar, and whisk briskly until the mixture lightens and becomes frothy.
  3. Stir in the lemon juice, lemon zest, and cornstarch until completely smooth and lump-free.
  4. Pour in the melted butter and whisk until the filling is glossy and combined.
  5. Gently fold the fresh blueberries into the filling.
  6. Pour the mixture into the pre-made tart shell, spreading it out evenly.
  7. Bake for 25–30 minutes, until set at the edges and slightly wobbly in the center.
  8. Remove from the oven and let cool on a rack; chill for at least an hour before slicing.

Notes

Serve with whipped cream or crème fraîche. Tastes best when chilled.
