Description

Bright and buttery lemon brownies that are dense like a classic brownie but with a refreshing lemon flavor.


Ingredients

  • 1 cup unsalted butter, melted
  • 2 cups sugar
  • 4 large eggs
  • 1/4 cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons lemon juice (for glaze)


Instructions

  1. Preheat the oven to 350°F (175°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, combine the melted butter and sugar. Whisk until smooth and glossy.
  3. Add the eggs one at a time, beating well after each addition until slightly aerated.
  4. Stir in the lemon juice and lemon zest until evenly distributed.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually fold the dry ingredients into the wet ingredients. Mix just until no streaks of flour remain.
  7. Pour the batter into the prepared pan and smooth the top with a spatula.
  8. Bake for 25–30 minutes, until edges are set and a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Let the brownies cool completely in the pan on a wire rack.
  10. Make the glaze by whisking the powdered sugar with 2–3 tablespoons of lemon juice until smooth. Spread the glaze over the cooled brownies, let it set, then cut into squares and serve.

Notes

Using fresh lemon juice and zest makes a significant difference in flavor. Don’t overmix once you add the flour.
