Description

Warm and comforting lemon garlic pasta that’s quick to make and irresistibly delicious.


Ingredients

  • 1/4 cup fresh parsley (for garnish)
  • 4 cloves garlic (minced)
  • Zest of 1 lemon
  • Juice of 2 lemons
  • 8 cups chicken or vegetable broth
  • 24 oz linguine or spaghetti
  • Red pepper flakes (to taste)
  • Salt and freshly ground black pepper (to taste)
  • 2 tbsp olive oil
  • 1 cup grated parmesan cheese
  • 1/2 cup heavy cream


Instructions

  1. Bring the chicken or vegetable broth to a boil. Add the linguine or spaghetti and cook according to package directions until al dente, about 8-10 minutes. Drain, reserving 1 cup of the broth.
  2. Heat olive oil in a skillet over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Pour in the lemon juice, zest, and reserved broth. Stir in the heavy cream and grated parmesan cheese. Season with red pepper flakes, salt, and black pepper.
  4. Add the cooked pasta to the skillet and toss to coat well with the sauce.
  5. Finish with a sprinkle of chopped fresh parsley before serving.

Notes

Store leftovers in an airtight container and refrigerate for up to 3 days. Reheat gently with a splash of broth or cream.
