Warm and comforting lemon garlic pasta that’s quick to make and irresistibly delicious.
Ingredients
- 1/4 cup fresh parsley (for garnish)
- 4 cloves garlic (minced)
- Zest of 1 lemon
- Juice of 2 lemons
- 8 cups chicken or vegetable broth
- 24 oz linguine or spaghetti
- Red pepper flakes (to taste)
- Salt and freshly ground black pepper (to taste)
- 2 tbsp olive oil
- 1 cup grated parmesan cheese
- 1/2 cup heavy cream
Instructions
- Bring the chicken or vegetable broth to a boil. Add the linguine or spaghetti and cook according to package directions until al dente, about 8-10 minutes. Drain, reserving 1 cup of the broth.
- Heat olive oil in a skillet over medium heat and sauté the minced garlic until fragrant, about 1 minute.
- Pour in the lemon juice, zest, and reserved broth. Stir in the heavy cream and grated parmesan cheese. Season with red pepper flakes, salt, and black pepper.
- Add the cooked pasta to the skillet and toss to coat well with the sauce.
- Finish with a sprinkle of chopped fresh parsley before serving.
Notes
Store leftovers in an airtight container and refrigerate for up to 3 days. Reheat gently with a splash of broth or cream.
