Ingredients
- 1 cup lentils
- 2 large potatoes, diced
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 2 cloves garlic, minced
- 1 teaspoon thyme
- 1 teaspoon cumin
- Salt and pepper to taste
- Olive oil
- Optional: warm bread for serving
Instructions
- In a large pot, warm the olive oil over medium heat.
- Add the chopped onion, diced carrots, and celery; let them cook until the onion is clear.
- Stir in the minced garlic, thyme, and cumin, cooking for another minute to let the flavors meld.
- Next, add the lentils, diced potatoes, and the vegetable broth. Bring to a rolling boil.
- Reduce the heat and let the mixture simmer for about 25-30 minutes, until lentils and potatoes are fork-tender.
- Finish by seasoning with salt and pepper. If you prefer a smooth texture, blend a portion of the soup using an immersion blender.
- Ladle the soup into bowls and serve hot with warm bread on the side.
Notes
This soup stores well in the refrigerator for up to five days. It can be frozen for up to three months, best without cream if added.
