Description

A comforting and nutritious lentil soup that’s quick to prepare and perfect for any occasion.


Ingredients

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1 cup dry green or brown lentils, rinsed
  • 6 cups water or vegetable broth
  • 1 teaspoon salt (add to taste at the end)
  • 1 bay leaf (optional)


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery to the pot.
  3. Cook for about 5 minutes, until the vegetables are softened.
  4. Add the minced garlic, dried thyme, and black pepper.
  5. Stir and cook for 1 minute until fragrant.
  6. Add the rinsed lentils, followed by the water or broth and the bay leaf if using.
  7. Bring the mixture to a boil over high heat.
  8. Reduce the heat to low, cover the pot, and let it simmer for 25 to 30 minutes, or until the lentils are tender.
  9. Remove the bay leaf, and add salt to taste.
  10. For a thicker consistency, mash a portion of the soup with a spoon or briefly use an immersion blender.
  11. Serve hot, topped with fresh herbs or a sprinkle of cheese if desired.
