Description
A comforting and nutritious lentil soup that’s quick to prepare and perfect for any occasion.
Ingredients
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 2 medium carrots, chopped
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon black pepper
- 1 cup dry green or brown lentils, rinsed
- 6 cups water or vegetable broth
- 1 teaspoon salt (add to taste at the end)
- 1 bay leaf (optional)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion, carrots, and celery to the pot.
- Cook for about 5 minutes, until the vegetables are softened.
- Add the minced garlic, dried thyme, and black pepper.
- Stir and cook for 1 minute until fragrant.
- Add the rinsed lentils, followed by the water or broth and the bay leaf if using.
- Bring the mixture to a boil over high heat.
- Reduce the heat to low, cover the pot, and let it simmer for 25 to 30 minutes, or until the lentils are tender.
- Remove the bay leaf, and add salt to taste.
- For a thicker consistency, mash a portion of the soup with a spoon or briefly use an immersion blender.
- Serve hot, topped with fresh herbs or a sprinkle of cheese if desired.
