Description

A refreshing salad that celebrates vibrant summer flavors with cucumbers, fresh herbs, and zesty lemon.


Ingredients

  • 1/4 cup fresh Dill
  • 1 tsp Lemon peel
  • 1/4 cup Parsley
  • 5 Persian cucumbers
  • 1/4 cup freshly squeezed Lemon juice
  • 8 oz dried Orzo pasta
  • Salt and pepper to taste
  • 1/4 cup extra virgin Olive oil
  • Feta cheese to taste


Instructions

  1. Cook the orzo pasta according to package instructions. Drain and rinse under cold water.
  2. Combine the cooked orzo, diced cucumbers, chopped dill, parsley, and lemon peel in a large bowl.
  3. Whisk together the lemon juice, olive oil, salt, and pepper in a small bowl.
  4. Pour the dressing over the salad and toss to combine.
  5. Crumble feta cheese over the top before serving.
  6. Chill in the fridge for about 15 minutes before serving to let the flavors meld.

Notes

Toast orzo in olive oil before boiling for added flavor. For a vegan version, omit feta cheese.
