Description

Crispy hash browns loaded with fluffy scrambled eggs, creamy avocado, and cottage cheese, topped with Everything But The Bagel seasoning.


Ingredients

  • 2 cups frozen hash browns
  • 4 large eggs
  • 1 ripe avocado
  • 1/2 cup cottage cheese
  • Everything But The Bagel seasoning
  • Salt and black pepper to taste


Instructions

  1. Cook the hash browns according to the package instructions until golden brown and crispy, then set aside.
  2. Scramble the eggs in a separate pan over medium heat until fluffy and fully cooked. Season with salt and black pepper.
  3. Smash the avocado in a bowl until smooth, seasoning with salt and pepper.
  4. Layer the cooked hash browns on a plate, topped with smashed avocado, scrambled eggs, and cottage cheese.
  5. Sprinkle Everything But The Bagel seasoning over the top and serve warm.
