Low-Calorie Air Fryer Zucchini Fries

Description

Crunchy, low-calorie zucchini fries made in the air fryer for a guilt-free snack or side dish.


Ingredients

  • 3 medium zucchini (about 1.251.5 lb)
  • 1/2 cup all-purpose flour (or almond flour for low-carb)
  • 2 large eggs, beaten
  • 3/4 cup panko breadcrumbs (or gluten-free panko)
  • 1/4 cup grated Parmesan (optional, omit for dairy-free)
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt, divided
  • 1/4 tsp black pepper
  • 12 tbsp olive oil or cooking spray


Instructions

  1. Trim the ends of the zucchini and cut each into 6–8 sticks about 3 inches long. Place in a colander, sprinkle 1/4 tsp salt over them, and let sit for 10 minutes. Pat dry thoroughly with paper towels.
  2. Set up a dredging station: Place flour in bowl #1, beaten eggs in bowl #2, and mix panko, Parmesan (if using), garlic powder, smoked paprika, remaining 1/4 tsp salt, and pepper in bowl #3.
  3. Dust zucchini sticks in flour, dip in egg, then press into the panko mixture until well coated.
  4. Preheat air fryer to 400°F (200°C) for 3 minutes.
  5. Lightly brush or spray the fries with oil and arrange in a single layer in the air fryer basket. Cook for 8–10 minutes, flipping halfway, until golden and crisp.
  6. Move cooked fries to a baking sheet in a single layer and keep warm in a low oven (200°F) while finishing remaining batches.
  7. Serve immediately with your favorite dip.

Notes

For lower calories, swap panko for crushed cornflakes or increase spices if omitting Parmesan. For dairy-free, skip the Parmesan and use extra spices.
