Ingredients
- 4 chicken breasts
- 2 cups fresh spinach
- 1 cup mushrooms (sliced)
- 4 oz cream cheese
- 1 cup chicken broth
- 2 cloves garlic (minced)
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add chicken and cook until browned on both sides, about 5-7 minutes. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds. Then, add sliced mushrooms and cook until they’re tender and releasing liquid.
- Stir in spinach until wilted. Add cream cheese and chicken broth, mixing until combined, and season with Italian seasoning, salt, and pepper.
- Place the chicken back into the skillet, spoon the sauce over it, and transfer everything to a baking dish.
- Bake in the preheated oven for about 20-25 minutes until the chicken is cooked through and the sauce is bubbling.
Notes
Use a meat thermometer to ensure chicken reaches 165°F (74°C). Consider adding sun-dried tomatoes or swapping chicken for shrimp for variations.
