Chicken, Spinach, and Mushroom Low-Carb Oven Dish


Description

A creamy and flavorful one-dish meal featuring tender chicken, earthy mushrooms, and vibrant spinach, all while being low in carbs.


Ingredients

  • 4 chicken breasts
  • 2 cups fresh spinach
  • 1 cup mushrooms (sliced)
  • 4 oz cream cheese
  • 1 cup chicken broth
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chicken and cook until browned on both sides, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds. Then, add sliced mushrooms and cook until they’re tender and releasing liquid.
  4. Stir in spinach until wilted. Add cream cheese and chicken broth, mixing until combined, and season with Italian seasoning, salt, and pepper.
  5. Place the chicken back into the skillet, spoon the sauce over it, and transfer everything to a baking dish.
  6. Bake in the preheated oven for about 20-25 minutes until the chicken is cooked through and the sauce is bubbling.

Notes

Use a meat thermometer to ensure chicken reaches 165°F (74°C). Consider adding sun-dried tomatoes or swapping chicken for shrimp for variations.
