Description

These make-ahead breakfast sandwiches are perfect for busy mornings, filled with savory turkey bacon or sausage, scrambled eggs, cheese, and fresh greens, all tucked in whole wheat English muffins.


Ingredients

  • Eggs
  • Whole wheat English muffins
  • Turkey bacon or sausage
  • Cheese slices (cheddar, mozzarella, or pepper jack)
  • Spinach or other greens
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cook the turkey bacon or sausage in a skillet over medium heat until fully cooked. Remove and set aside.
  3. In a separate bowl, whisk together eggs with salt and pepper. Scramble them in the same pan until fluffy and fully cooked.
  4. Assemble each muffin half: place a slice of cheese, followed by the cooked protein, scrambled eggs, and a handful of spinach.
  5. Cap each sandwich with the other half of the muffin.
  6. Wrap each sandwich securely in foil or parchment paper and store them in the freezer.
  7. To reheat, unwrap and microwave for 1-2 minutes or bake in the oven until heated through.
