Ingredients
- 2 large Chicken Breasts, boneless, skinless, sliced thinly
- Salt and Pepper, to taste
- 2 tbsp Olive Oil, for searing
- 3 cloves Garlic, minced
- 1/3 cup Sun-Dried Tomatoes, chopped
- 1/2 cup Chicken Broth
- 1 cup Heavy Cream
- 1/2 cup Parmesan Cheese, freshly grated
- 1 tsp Italian Seasoning
- 1/2 tsp Crushed Red Pepper Flakes (optional)
- 8 oz Pasta (penne, rigatoni, or fettuccine)
- Fresh Basil, for garnish
Instructions
- Boil water in a pot, add pasta, and cook according to package instructions until al dente. Drain and set aside.
- Season chicken with salt and pepper. Heat olive oil in a skillet over medium heat and sear the chicken until golden brown, about 5-7 minutes.
- Add garlic and sun-dried tomatoes; cook for an additional 2 minutes until the garlic is fragrant.
- Pour in chicken broth and simmer for about 3 minutes. Then add heavy cream and stir until combined.
- Gradually mix in Parmesan cheese, Italian seasoning, and crushed red pepper flakes (if using) until the cheese melts and the sauce thickens.
- Add the cooked pasta to the skillet and toss until well coated in the sauce.
- Serve hot garnished with fresh basil.
Notes
You can substitute the chicken with mushrooms or tofu for a vegetarian version. Store leftovers in an airtight container for 3-4 days.
