Description

Ingredients
- 1 cup lentils
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onions, carrots, and celery. Sauté them until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the lentils, vegetable broth, diced tomatoes, cumin, paprika, salt, and pepper to the pot. Stir well.
- Bring everything to a gentle boil, then reduce the heat. Let it simmer uncovered for about 30 minutes or until the lentils are tender.
- Taste and adjust any seasoning if necessary.
- Serve the soup hot, garnished with fresh parsley.
