Description

A comforting and nutritious Mediterranean lentil soup, packed with protein and fiber, and full of flavor from spices and fresh herbs.


Ingredients

  • 1 cup lentils
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 can diced tomatoes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish


Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onions, carrots, and celery. Sauté them until softened, about 5-7 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the lentils, vegetable broth, diced tomatoes, cumin, paprika, salt, and pepper to the pot. Stir well.
  5. Bring everything to a gentle boil, then reduce the heat. Let it simmer uncovered for about 30 minutes or until the lentils are tender.
  6. Taste and adjust any seasoning if necessary.
  7. Serve the soup hot, garnished with fresh parsley.
