Description

A quick weeknight shortcut to bright, comforting Mediterranean flavors with crispy flour tortillas, melty mozzarella, tangy feta, spinach, and more.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato, diced
  • 1/4 cup red onion, thinly sliced
  • 1 tablespoon olive oil
  • Black pepper, to taste


Instructions

  1. In a mixing bowl, combine the shredded mozzarella, crumbled feta, chopped spinach, diced tomato, sliced red onion, and black pepper. Toss gently to combine.
  2. Lay one tortilla flat and spoon about one-quarter of the filling on one half. Fold the empty half over to create a semicircle. Repeat with remaining tortillas.
  3. Heat a skillet over medium heat and add olive oil. Once shimmering, place one filled tortilla in the pan. Cook for 3–4 minutes until the underside is golden and crisp.
  4. Flip the quesadilla carefully and cook the other side for another 3–4 minutes. Adjust heat if needed.
  5. Remove from the pan and let rest for 1 minute. Slice into wedges and serve warm.

Notes

Swap whole-wheat or gluten-free tortillas for substitutions. For tang, add a squeeze of lemon; for smoke, try roasted red peppers or smoked paprika.
