A delightful twist to a classic dish, these quesadillas combine melted cheese with vibrant Mediterranean flavors, perfect for quick meals or gatherings.
Ingredients
- 4 flour tortillas
- 1 cup fresh spinach (chopped)
- 1/2 cup shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 1 small tomato (diced)
- 1/4 cup red onion (thinly sliced)
- 1 tablespoon olive oil
- Black pepper (to taste)
Instructions
- In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper. Mix until well coated.
- Lay one tortilla flat and place one-fourth of the filling mixture on half of the tortilla. Fold the other half over to cover the filling.
- Heat a non-stick skillet over medium heat and add the olive oil.
- Place the filled tortilla in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown.
- Carefully flip and cook for another 3-4 minutes until both sides are crispy and golden.
- Remove from heat, slice into wedges, and serve warm.
Notes
For a fun twist, top with Greek yogurt or tzatziki sauce. Store leftovers in an airtight container for up to 3 days.
