Description

A delightful twist to a classic dish, these quesadillas combine melted cheese with vibrant Mediterranean flavors, perfect for quick meals or gatherings.


Ingredients

  • 4 flour tortillas
  • 1 cup fresh spinach (chopped)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup crumbled feta cheese
  • 1 small tomato (diced)
  • 1/4 cup red onion (thinly sliced)
  • 1 tablespoon olive oil
  • Black pepper (to taste)


Instructions

  1. In a mixing bowl, combine the mozzarella cheese, feta cheese, spinach, tomato, red onion, and black pepper. Mix until well coated.
  2. Lay one tortilla flat and place one-fourth of the filling mixture on half of the tortilla. Fold the other half over to cover the filling.
  3. Heat a non-stick skillet over medium heat and add the olive oil.
  4. Place the filled tortilla in the skillet and cook for about 3-4 minutes, or until the bottom is golden brown.
  5. Carefully flip and cook for another 3-4 minutes until both sides are crispy and golden.
  6. Remove from heat, slice into wedges, and serve warm.

Notes

For a fun twist, top with Greek yogurt or tzatziki sauce. Store leftovers in an airtight container for up to 3 days.
