Ingredients

  • 3-4 boneless, skinless chicken breasts
  • 3 cloves fresh garlic, minced
  • ¼ cup olive oil
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon honey
  • Salt and pepper to taste
  • 1 teaspoon dried thyme or rosemary


Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, honey, minced garlic, salt, pepper, and herbs to create a vibrant marinade.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over them. Seal the bag or cover the dish and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C).
  4. Lightly grease a baking dish and arrange the marinated chicken breasts inside.
  5. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  6. Allow the chicken to rest for five minutes before serving.

Notes

For enhanced flavor, marinate chicken overnight. Leftovers can be stored in the fridge for up to three days or frozen for up to three months.
