A cozy, one-pot comfort meal combining lean ground turkey, cheesy tortellini, bright tomatoes, and spinach for a hearty soup that cooks quickly.
Ingredients
- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 2 cups cheese tortellini
- 2 cups spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add ground turkey and cook until browned and no longer pink. Drain excess fat if necessary.
- Add chopped onion and minced garlic, and cook until the onion is translucent (about 3–4 minutes).
- Pour in chicken broth and diced tomatoes, bringing the mixture to a gentle boil.
- Stir in cheese tortellini and Italian seasoning. Reduce heat and simmer for 5–7 minutes until the tortellini is tender.
- Add spinach and cook until wilted.
- Season with salt and pepper to taste. Serve hot.
Notes
You can substitute ground chicken for turkey and use vegetable broth for a vegetarian option. For gluten-free diets, use GF tortellini.
