Description

A cozy, one-pot comfort meal combining lean ground turkey, cheesy tortellini, bright tomatoes, and spinach for a hearty soup that cooks quickly.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups cheese tortellini
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add ground turkey and cook until browned and no longer pink. Drain excess fat if necessary.
  3. Add chopped onion and minced garlic, and cook until the onion is translucent (about 3–4 minutes).
  4. Pour in chicken broth and diced tomatoes, bringing the mixture to a gentle boil.
  5. Stir in cheese tortellini and Italian seasoning. Reduce heat and simmer for 5–7 minutes until the tortellini is tender.
  6. Add spinach and cook until wilted.
  7. Season with salt and pepper to taste. Serve hot.

Notes

You can substitute ground chicken for turkey and use vegetable broth for a vegetarian option. For gluten-free diets, use GF tortellini.
