Bruschetta Chicken


Description

A delightful fusion of grilled or baked chicken and fresh bruschetta toppings, perfectly encapsulating summer’s vibrant flavors.


Ingredients

  • 4 chicken breasts
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups Roma tomatoes, diced
  • 1/4 cup fresh basil, chopped
  • 1 cup mozzarella cheese, shredded
  • Balsamic glaze (optional)


Instructions

  1. Preheat your grill or oven to medium-high heat.
  2. Season the chicken breasts with salt, pepper, and drizzle them with olive oil.
  3. Grill the chicken for about 6-7 minutes on each side, or until fully cooked (an internal temperature of 165°F). If baking, place in a preheated oven for 25-30 minutes.
  4. While the chicken is cooking, prepare the bruschetta topping by mixing together the diced tomatoes, chopped basil, salt, and pepper in a bowl.
  5. Once the chicken is cooked, top each piece with the bruschetta mixture.
  6. Add shredded mozzarella cheese on top, then return to the grill or oven just until the cheese melts.
  7. Drizzle with balsamic glaze before serving.

Notes

For added flavor, marinate the chicken before cooking. Use fresh, ripe tomatoes for the best bruschetta topping.
