Ingredients
- 4 chicken breasts
- Salt and pepper to taste
- 2 tablespoons olive oil
- 2 cups Roma tomatoes, diced
- 1/4 cup fresh basil, chopped
- 1 cup mozzarella cheese, shredded
- Balsamic glaze (optional)
Instructions
- Preheat your grill or oven to medium-high heat.
- Season the chicken breasts with salt, pepper, and drizzle them with olive oil.
- Grill the chicken for about 6-7 minutes on each side, or until fully cooked (an internal temperature of 165°F). If baking, place in a preheated oven for 25-30 minutes.
- While the chicken is cooking, prepare the bruschetta topping by mixing together the diced tomatoes, chopped basil, salt, and pepper in a bowl.
- Once the chicken is cooked, top each piece with the bruschetta mixture.
- Add shredded mozzarella cheese on top, then return to the grill or oven just until the cheese melts.
- Drizzle with balsamic glaze before serving.
Notes
For added flavor, marinate the chicken before cooking. Use fresh, ripe tomatoes for the best bruschetta topping.
