Ingredients
- 1 cup shredded coconut
- 1/2 cup cocoa powder
- 1/2 cup almond flour
- 1/4 cup honey or maple syrup
- 1 teaspoon vanilla extract
- A pinch of salt
- Chocolate chips for coating (optional)
Instructions
- In a mixing bowl, combine the shredded coconut, cocoa powder, almond flour, honey or maple syrup, vanilla extract, and a pinch of salt.
- Mix everything until it’s well combined. The mixture should hold together when pressed.
- Refrigerate the mixture for about 30 minutes to make it easier to handle and shape.
- Once chilled, scoop out small amounts and roll them into bite-sized balls.
- If desired, melt some chocolate chips and dip each ball into the chocolate.
- Place your snowballs on a lined baking sheet and refrigerate until they are firm.
- Store any extras in an airtight container in the fridge or freezer for later.
Notes
For a smoother texture, consider pulsing the coconut in a food processor. If the mixture is too sticky, add more almond flour. Use a small cookie scoop for uniform sizes.
