Delightful no-bake treats that combine rich chocolate and coconut flavors in bite-sized form, perfect for any occasion.


Ingredients

  • 1 cup shredded coconut
  • 1/2 cup cocoa powder
  • 1/2 cup almond flour
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Chocolate chips for coating (optional)


Instructions

  1. In a mixing bowl, combine the shredded coconut, cocoa powder, almond flour, honey or maple syrup, vanilla extract, and a pinch of salt.
  2. Mix everything until it’s well combined. The mixture should hold together when pressed.
  3. Refrigerate the mixture for about 30 minutes to make it easier to handle and shape.
  4. Once chilled, scoop out small amounts and roll them into bite-sized balls.
  5. If desired, melt some chocolate chips and dip each ball into the chocolate.
  6. Place your snowballs on a lined baking sheet and refrigerate until they are firm.
  7. Store any extras in an airtight container in the fridge or freezer for later.

Notes

For a smoother texture, consider pulsing the coconut in a food processor. If the mixture is too sticky, add more almond flour. Use a small cookie scoop for uniform sizes.
