Description
A warm and wholesome breakfast bake featuring apples, oats, and cinnamon, perfect for busy mornings or leisurely weekends.
Ingredients
- 1 Tbsp lemon juice
- 4 cups Granny Smith apples (peeled and cut into ¼” cubes)
- 1/2 cup old-fashioned oats
- 1 cup all-purpose flour
- 2 tsp baking soda
- 2 tsp ground cinnamon
- 1/2 cup unsalted butter
- 1/2 cup granulated sugar
- 1/2 tsp pure vanilla extract
- 1/2 tsp salt
- 2 large eggs
- 1/4 cup apple juice (or water)
- 3/4 cup pecans (finely chopped and divided)
- 3/4 cup powdered sugar
- 1 Tbsp milk
Instructions
- Preheat the oven to 375°F (190°C) and coat a 9” x 13” baking dish with cooking spray.
- Toss the diced apples with lemon juice and set aside.
- Pulse the oats in a food processor until coarse. In a separate bowl, sift together the flour, baking soda, and cinnamon, then mix in the oat flour.
- Cream the butter and sugar together in a large bowl until light and fluffy. Add the vanilla, salt, and eggs one at a time, mixing well after each addition.
- Add the dry ingredients, apple juice, diced apples, and half of the pecans to the butter mixture and fold until well combined. Transfer to the baking dish.
- Top with the remaining pecans and bake for 25–30 minutes, until golden brown. Allow to cool.
- Mix the powdered sugar with milk to create a drizzle. Once the bake has cooled, drizzle the sweet glaze on top.
- Slice and enjoy!
Notes
Customize this recipe by using different nuts or adding dried fruits for new flavors. Serve warm or at room temperature, and consider pairing with Greek yogurt or a drizzle of maple syrup.
