A quick and hearty one-pan meal featuring juicy chicken and sticky-sweet honey BBQ rice, perfect for weeknight dinners.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth (low-sodium preferred)
  • 1/2 cup honey BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Pat the chicken dry and season on both sides with garlic powder, onion powder, salt, and pepper.
  3. Add the chicken to the skillet and cook until browned on both sides, about 5 minutes total. Turn once.
  4. Remove the chicken from the skillet and set it aside on a plate.
  5. In the same skillet, add the rice and toast it, stirring for about 1 minute so it picks up the browned bits.
  6. Pour in the chicken broth combined with the honey BBQ sauce. Stir to combine and bring the mixture to a gentle simmer.
  7. Place the chicken back into the skillet on top of the rice and liquid. Cover the skillet and cook for about 15-20 minutes, or until the rice is tender and the chicken registers 165°F (no longer pink in the center).
  8. Remove the lid, fluff the rice with a fork, let the chicken rest a few minutes, then slice or shred it and mix lightly with the rice.
  9. Garnish with chopped green onions and serve hot.

Notes

For a richer flavor, use chicken thighs instead of breasts. For a lower-carb version, swap rice for cauliflower rice, adding it near the end to prevent overcooking.
