Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 1 cup fresh cranberries, chopped
  • 1 tablespoon orange zest
  • 1/4 cup orange juice
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan, and set it aside.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until blended.
  3. In another bowl, cream the softened butter and sugar until light and fluffy. Add the milk, orange juice, vanilla extract, and orange zest, mixing until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Carefully fold in the chopped cranberries.
  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  6. Bake for about 60 minutes, or until a toothpick inserted into the center comes out clean.
  7. Once baked, remove from the oven and let cool in the pan for about 10 minutes before transferring to a wire rack.
  8. For extra sweetness, drizzle with a simple orange glaze before serving.

Notes

Use fresh cranberries for the best flavor. Don’t overmix the batter to avoid a dense bread. The bread can be frozen for up to three months.
