Pineapple Chicken and Rice

Description

A quick and easy one-pan meal combining sweet pineapple with savory chicken and rice.


Ingredients

  • 1 lb chicken breast, cubed
  • 1 cup pineapple chunks (fresh or canned, drained)
  • 2 cups cooked rice (day-old rice works best)
  • 1 bell pepper, diced (any color)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/4 cup soy sauce
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Green onions for garnish


Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and diced bell pepper. Sauté until softened, about 4–5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Push the vegetables to the side and add the cubed chicken. Cook, stirring occasionally, until browned and cooked through, about 6–8 minutes.
  5. Pour in the pineapple chunks and soy sauce. Stir to coat the chicken and cook for 2–3 minutes until the pineapple is warmed and the sauce is slightly reduced.
  6. Add the cooked rice and mix well so the rice soaks up the sauce and heats through, about 2–3 minutes.
  7. Taste and season with salt and pepper as needed.
  8. Remove from heat and garnish with chopped green onions before serving.

Notes

For a gluten-free version, use tamari instead of soy sauce. If you prefer more sauce, add a tablespoon of water mixed with a teaspoon of cornstarch to thicken slightly.
