Pumpkin Cottage Cheese Bake

Ingredients

  • 1 cup pumpkin puree
  • 1 cup cottage cheese
  • 1/2 cup oats
  • 1/4 cup honey or maple syrup
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the pumpkin puree, cottage cheese, oats, honey or maple syrup, eggs, vanilla extract, cinnamon, nutmeg, salt, and baking powder. Mix until everything is well incorporated.
  3. Pour the mixture into a greased baking dish, spreading it evenly.
  4. Bake in the preheated oven for 30-40 minutes, or until the bake is set and lightly golden on top.
  5. Let it cool slightly before serving. Enjoy it warm or chilled!

Notes
