Ingredients
- 1 cup pumpkin puree
- 1 cup cottage cheese
- 1/2 cup oats
- 1/4 cup honey or maple syrup
- 2 eggs
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the pumpkin puree, cottage cheese, oats, honey or maple syrup, eggs, vanilla extract, cinnamon, nutmeg, salt, and baking powder. Mix until everything is well incorporated.
- Pour the mixture into a greased baking dish, spreading it evenly.
- Bake in the preheated oven for 30-40 minutes, or until the bake is set and lightly golden on top.
