Description

Delightful autumn treat with a graham cracker crust and luscious pumpkin filling topped with crunchy streusel.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 can (15 oz) pumpkin puree
  • 1 can (14 oz) sweetened condensed milk
  • 2 large eggs
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • ½ cup brown sugar, packed
  • ½ cup rolled oats
  • ½ cup unsalted butter, softened


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine graham cracker crumbs, melted butter, and granulated sugar. Stir until well combined.
  3. Press the crumb mixture firmly into the bottom of the prepared pan to form an even layer.
  4. In another bowl, whisk together the pumpkin puree, sweetened condensed milk, eggs, and spices until smooth. Pour this mixture over the crust.
  5. For the crumb topping, mix flour, brown sugar, oats, and softened butter in a bowl until crumbly. Sprinkle evenly over the pumpkin layer.
  6. Bake for 30-35 minutes, or until the top is golden and the center is set.
  7. Allow to cool before cutting into squares.

Notes

Serve warm with vanilla ice cream or caramel sauce. Can be stored in an airtight container for up to one week.
