Ingredients
- 1 cup rolled oats
- 1 cup almond milk (or any milk of your choice)
- 1/2 cup pumpkin puree
- 1 teaspoon pumpkin spice
- 1 tablespoon maple syrup (or to taste)
- 1/2 cup Greek yogurt (optional for a protein boost)
- 27 grams protein powder (optional, for extra protein)
- Toppings: nuts, seeds, or fruits of your choice
Instructions
- In a bowl, mix together the rolled oats, almond milk, pumpkin puree, pumpkin spice, and maple syrup. Stir until well combined.
- If using Greek yogurt or protein powder, gently fold those into the oat mixture.
- Pour the mixture into a jar or an airtight container.
- Seal tightly and refrigerate to chill overnight.
- The next morning, give the oats a good stir. If thick, add a splash more milk to reach the desired consistency.
- Top with your choice of nuts, seeds, or fruits before enjoying!
Notes
Adjust sweetness with more or less maple syrup. Substitute with a dairy-free yogurt if needed.
