Delightful cookies that combine pumpkin pie spice with soft, buttery goodness, perfect for autumn gatherings.


Ingredients

  • 1/2 cup unsalted butter, melted
  • 1/3 cup pumpkin puree
  • 1 cup white sugar
  • 2 cups all-purpose flour
  • 1 large egg
  • 2 tsp vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 tsp baking powder
  • 1/2 tsp salt
  • Cinnamon (for sprinkling)
  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the melted butter, pumpkin puree, white sugar, egg, and vanilla extract until smooth.
  3. Gradually add in the dry ingredients: flour, pumpkin pie spice, baking powder, and salt. Stir until a cookie dough forms.
  4. Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 25 minutes.
  5. Once chilled, roll the dough into 1 1/2 to 2 tbsp sized balls and place them on a lined baking sheet.
  6. Bake for 18 minutes, or until the edges are slightly golden.
  7. While cookies are baking, prepare the cream cheese frosting by beating together cream cheese and butter until creamy; add powdered sugar and vanilla, then refrigerate.
  8. Remove cookies from the oven to cool completely. Frost each cookie with about a tablespoon of frosting and sprinkle with pumpkin pie spice or cinnamon, if desired.

Notes

Store cookies in an airtight container at room temperature for up to a week, or freeze unfrosted cookies for up to three months.
