Delightful cookies that combine pumpkin pie spice with soft, buttery goodness, perfect for autumn gatherings.
Ingredients
- 1/2 cup unsalted butter, melted
- 1/3 cup pumpkin puree
- 1 cup white sugar
- 2 cups all-purpose flour
- 1 large egg
- 2 tsp vanilla extract
- 1 1/2 tsp pumpkin pie spice
- 1/4 tsp baking powder
- 1/2 tsp salt
- Cinnamon (for sprinkling)
- 4 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the melted butter, pumpkin puree, white sugar, egg, and vanilla extract until smooth.
- Gradually add in the dry ingredients: flour, pumpkin pie spice, baking powder, and salt. Stir until a cookie dough forms.
- Cover the bowl with plastic wrap and chill the dough in the refrigerator for about 25 minutes.
- Once chilled, roll the dough into 1 1/2 to 2 tbsp sized balls and place them on a lined baking sheet.
- Bake for 18 minutes, or until the edges are slightly golden.
- While cookies are baking, prepare the cream cheese frosting by beating together cream cheese and butter until creamy; add powdered sugar and vanilla, then refrigerate.
- Remove cookies from the oven to cool completely. Frost each cookie with about a tablespoon of frosting and sprinkle with pumpkin pie spice or cinnamon, if desired.
Notes
Store cookies in an airtight container at room temperature for up to a week, or freeze unfrosted cookies for up to three months.
