Description

A warm and bubbly casserole that blends the comforting flavors of French toast with juicy blueberries, perfect for brunch gatherings or cozy family breakfasts.

Ingredients

  • 1 loaf of bread (challah or brioche recommended)
  • 1 cup blueberries (fresh or frozen)
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • Butter (for greasing)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish with butter.
  2. Tear the loaf of bread into bite-sized pieces and put half of them in the baking dish.
  3. Sprinkle the blueberries over the bread pieces, then layer the remaining bread on top.
  4. In a bowl, whisk the eggs, milk, sugar, vanilla extract, cinnamon, and salt until well combined.
  5. Pour the egg mixture evenly over the bread and berries, ensuring every piece of bread is soaked.
  6. Cover with foil and allow it to sit for 30 minutes to an hour, or overnight in the refrigerator.
  7. Bake covered for 30 minutes, then remove the foil and bake for an additional 15-20 minutes until golden brown and set.
  8. Let it cool slightly before serving. Enjoy your delicious casserole!

Notes

For a healthier version, you can opt for whole grain bread or use almond milk in place of regular milk. Serve it drizzled with maple syrup or topped with whipped cream.
